"How to Make Delicious Paneer Bhurji or Scrambled Paneer, Indian Style at Home?"

An very easy to make healthy paneer recipe by my mum. Ma used to add all the left over vegetables in the fridge in this recipe so there is no wastage and the fridge gets a spring clean! We enjoyed this with toasted bread slices or sometimes with a daal and steamed rice.


Ingredients

·         2 tbsp oil

·         1 large onion chopped

·         1 green chilli chopped (optional)

·         ½ green bell pepper

·         ½ yellow bell pepper

·         250 gm paneer grated or chopped very finely

·         1 cup peas

·         2-3 medium tomatoes chopped

·         Salt

·         Coriander leaves to garnish

·         Spices

o   1 tsp cumin seeds

o   1/2 tsp turmeric

o   1 tsp coriander powder

o   1 tsp my homemade vegetables spice mix (Recipe here on Facebook) 

o   1 tsp chilli powder

o   ½ tsp garam masala for garnish

 

Method

Take a non-stick pan,  add the oil

When the oil is hot, add the cumin seeds and green chilli (optional)

Once the cumin seeds sizzles, add the chopped onion

Ensure the onions are light golden and not very golden brown, which can take upto 10 minutes

Add the peas and bell peppers, mix well and cook for 5 minutes on low heat with the lid covered.

Now add the chopped tomatoes and cook for another 8-10 minutes until soft and mushy.

Now lower the heat, and add the all the powdered spices except the garam masala

Mix well for a minute or so. Ensure you don’t burn the so add a tablespoon of water.

Add the grated paneer

Mix well, add a few tablespoons of water, add salt and cook for 5 minutes with the lid on very low heat.

Switch off the burner.

Garnish the garam masala and fresh coriander leaves

 

Last bit

You can cut a few slices of sourdough toast them and once buttered, spread the paneer on it and enjoy!
