Amritsari fish fry in air-fryer
The famous fish from the city of Amritsar in Pubjab. I have tried to re create this dish and bring in that same flavour in an air fryer, taking me back to memories of what I have tasted in the by-lanes of Amritsar, standing by the corner shop and enjoying the fish, the aromas, the cacophony of noise and the beauty of my home state in India - Punjab.
Ingredients
2 tablespoons mustard oil
250 gm fish, cut into medium size pieces or used whole (I used bass fillets)
Juice of one lemon
1 tablespoon gram flour, slightly dry roasted.
1 tablespoon ginger and garlic paste/mince
Spices
1/2 teaspoon of turmeric
1/2 teaspoon mango powder
1/2 teaspoon red chilli powder (Degi mirch)
1/2 teaspoon Kashmiri red chilli
Pinch of cumin powder
1/2 teaspoon coriander powder
1/2 teaspoon garam masala
1/2 teaspoon carom seeds
1/4 teaspoon black pepper powder
Salt as per taste
Method
Dry roast the gram flour for a minute it so but ensure its not darkened.
Marinate the fish pieces with all the spices, salt and lemon juice and keep aside for 1 hour.

Now add each piece of marinated fish seperately into the airfryer compartment.
Fry for 15 minutes on 200 Deg Celsius. Flip midway and baste with some oil.
Garnish with lemon, onions, coriander leaves and serve with corainder and mint chutney!
