Amritsari fish fry in air-fryer

The famous fish from the city of Amritsar in Pubjab. I have tried to re create this dish and bring in that same flavour in an air fryer, taking me back to memories of what I have tasted in the by-lanes of Amritsar, standing by the corner shop and enjoying the fish, the aromas, the cacophony of noise and the beauty of my home state in India - Punjab.


Ingredients

  • 2 tablespoons mustard oil

  • 250 gm fish, cut into medium size pieces or used whole (I used bass fillets)

  • Juice of one lemon

  • 1 tablespoon gram flour, slightly dry roasted.

  • 1 tablespoon ginger and garlic paste/mince

  • Spices

    • 1/2 teaspoon of turmeric

    • 1/2 teaspoon mango powder

    • 1/2 teaspoon red chilli powder (Degi mirch)

    • 1/2 teaspoon Kashmiri red chilli

    • Pinch of cumin powder

    • 1/2 teaspoon coriander powder

    • 1/2 teaspoon garam masala

    • 1/2 teaspoon carom seeds

    • 1/4 teaspoon black pepper powder

  • Salt as per taste


Method


  • Dry roast the gram flour for a minute it so but ensure its not darkened.

  • Marinate the fish pieces with all the spices, salt and lemon juice and keep aside for 1 hour.


  • Now add each piece of marinated fish seperately into the airfryer compartment.

  • Fry for 15 minutes on 200 Deg Celsius. Flip midway and baste with some oil.

  • Garnish with lemon, onions, coriander leaves and serve with corainder and mint chutney!
